Akki Roti

This Akki Roti i learned from one of the tv show. Then i tried this in home. Its really nice.. I updated recipe below..

Ingredients:

Rice flour- 1 cup
Green chilli- 3
Asafoetida powder- a pinch
Grated coconut- 1/2 cup
Jeera- 2 sp
Coriendar leaves
Salt
oil

Preparation:

1. Mix rice flour,coconut and salt well.

2. Then add green chilli,jeera,coriendar leaves,asafoetida powder again mix it well.

3. Now by adding little by little water knead it well as a soft dough.

4. Now heat the tawa wit oil. In the mean time make a handful of prepared dough,
    place on banana leaf and start patting the dough to form a round shape.

5. Transfer this to heated tawa and drizzle some oil on the side of the adai.

6. After a few seconds flip the adai into other side. cook for few sec.

7. Later remove from tawa and serve hot with coconut chuttney..:)

kara kulambu with brinjal

Kara kulambu with brinjal gives yummyyy taste..Before known this method i dont like this kulambu.. my mom use to scold me always for that :( :( .. Later i came to known this method from one of the site.. It makes me to try because of its color and odour.. Later i became fan for this :) :) .. Hot pot rice with kara kulambu and appalam is my favourite combo..

Ingredients:

Brinjal- 4
Onion- 1
Tomato- 2
Garlic- 7
Tamarind water- 1 1/2 cup
Sambar Powder- 2 tsp
Pepper Powder- 1/4 tsp
Turmeric Powder- 1/4 tsp
Jaggery- 1/4 tsp
Salt

 To Temper:

Fenugreek- 1/4 tsp
Mustard seed- 1 tsp
Urad Dal- 1 tsp
Toor dal- 1 tsp
Jeera- 2 tsp
Curry leaves
Oil

To Grind:

Grated Coconut- 1/2 cup
Onion- 1

Preparation:

1. Temper the given items given under temper.

2. Then add onion,garlic saute well for 3 mins. Now add tomato again saute well.

3. Add Tamarind water,salt,turmeric powder and sambar powder.In this stage you
    can add water if you needed.

4. Now add brinjal and leave for while. Let it boil.

5. Grind the items given under to grind. Make it as a fine paste.

6. Add this grind mixture. Let it again boil for 3 to 4 mins.

7. Atlast add pepper powder and jaggery. Keep it in low flame for while.

8. Sever with hot rice,dosa,idly..

Maida egg roll

Most of the kids hate egg. To be say frankly i too dont like  :) :).. So my mom make me to eat like this maida egg roll. When i first ate this i really dont know my mom hidden egg inside this roll. Because it was too yummy with sauce inside. Later only i came to know, my mom hidden egg inside. From that day i became fan for this recipe. Its really healthy one. Try it in your home and tell me your feedback..

Ingredients:

Maida flour- 2 cup
Egg- 2
Carrot- 1 big
Onion- 1 big
Green chilli- 1 big
Curry leaves
Water
Salt
Oil

Preparation:

1. Take a bowl and add maida and pinch of salt mix it well.

2. Then add little water knead it well as a soft dough.

3. In the mean time we prepare for inner stuf.

4. Take a kadai add oil and add onion and green chilli saute it well..(For quicken the process add little salt)

5. After onion turned into goldern color add grated carrot saute well for 5 min and check for salt.

6. Now stuffing is ready. Beat egg well and keep it aside.

7. Now we have to make a maida roti. Make a dough as a equal sized ball. Roll it in a roti maker.

8. In pan add oil heat this rolled dough. Once its color change flip it into the other side.

9. After both the side cooked well. Pour 2 tsp of egg in one side of roti and flip it into another side.
   After egg get cooked well. Remove from pan. Place the veg mixture in it and some drops of tomato
   sauce and roll it well and serve hot.

10. Repeat same for all the balls.

Note:

1. You can also add other vegetables.

2. Dont add more salt to vegetables when you saute.

Cauliflower Peas Gravy

This gravy is very flavourful and spicy. Goes well with roti and puri. First time i tried in home, but its taste and flavour makes me to add this as my favourite one. Sure you will also feel like me after tasted..

Ingredients:

Cauliflower- 1 small
Onion- 1 small
Tomato- 1 big
Green peas- 1 handful
Turmeric Powder- a pinch
Salt
Oil

For Grainding:

Coconut- 4 tsp
Cashewnut- 4 no
Onion- 1 small
Garlic- 4 flakes
Fried Gram- 1 tsp
Elachi- 2
Cinnamom- 1/2
Cloves- 2 no
Green chilli- 3
Red Chilli- 3
Dry coriander seed- 1 tsp

Preparation:

1. Grind everything which given under for grinding. Grind well as a thick paste.

2. Boil cauliflower and peas in hot water with salt and turmeric powder.

3. Then add oil in a pan and saute onion well.

4. Then add tomato and mash it well.

5. Now add the grind paste to it and fry in low flame.

6. Later add boiled cauliflower and peas and fry for few mins.

7. Add required water,salt and leave for a while. Let it boil for 3 mins.

8. Now cauliflower peas gravy is ready to serve with roti and puri...Enjoy eating :) :) ..

Coriander Coconut Chutney

This is very simple version of chutney. Its attracted by everyone because of its attractive color. It goes well with Idly and dosa.

Ingredients:

Scraped coconut- 1 handful
Coriander Leaves- 1 handful
Tamarind- small piece
Ginger- small piece
Green chilli-  4
Salt- as per taste
oil- 2 tsp

To Temper:

Mustard seed- 1 tsp
Urad Dal- 1 tsp
Curry leaves

Preparation:

1. Heat oil in kadai and saute coriander leaves and keep it aside.

2. In the remaining oil saute Tamarind and green chilli seperatly.

3. Then grain everything along with coconut, salt with little water.

4. Then temper the things given under To Temper and add it to chutney.

Note:

1. If you use fresh coriander leaves then chutney well look more colorful.

2. Use the fresh coconut.

3. You can also add 1 tsp of roasted gram when you grain chutney.

Jangri-Indian sweet recipe

Jangri is very famous Indian sweet found all over India. Every Indian feels mouth watery when they saw jangri. I think its because of its attractive color. And i am not exception in that because i just love jangri. My long days dream is to make jangri in home. Suddenly i saw this in Rak's Kitchen. They given it very easily with nice explanation and i am thankful for rak's kitchen because it came out really well in my first try itself. I just jumped out in joy.. Hurray :) :) :)...

My dad did not believe that i maked this in home. He thought i bought this from shop. Then atlast my mom explained him then he smiled at me :) and said well done :) :). I became very happy after i hear this from him because he dont like wasting things in kitchen.. So today i escaped from him..Again Hurray :) :) :)

Ingredients:

For Batter:

Whole white urad dal- 3/4 cup
Rice flour- 1 tsp(optional)
Orage food color- 1/2 pinch
Salt- a pinch

For Sugar syrup:

Sugar- 3/4 cup
Orange food color- 1/2 pinch
Lemon juice- 1/2 tsp
Rose essence/Elachi powder- 4 drops
Water- as sugar dissolved in water

Preparation:

1. Soak urad dal for 2 hrs then grind it with little water(like vada batter). The batter should be
    fluffy and smooth.

2. After grind add salt,food color and rice flour. If you are grind using  grinder then no need to add
    rice flour.If you grind in mixer mean then you should add. Since today i grind in mixer i added 1 tsp
    of rice flour here.

3. In the mean time heat sugar with water. After one string consistency add lemon juice, food color,
   essence and mix everything gently. If you did not have essence dont worry :(.. Still you can add
   elachi  power :) :)..

4. Now take one zip lock cover and make a tiny hole in it. And pour that batter into it and tie it with band.

5. Dont start immediatly in oil. First try out in the plate.

6. Then keep a flat pan with 1 inch of oil. Let it be in low flame always.

7. Now draw jangri as per your desired shape in pan. Turn carefully after its color changed. Once it
    became  like crips. Take carefully from oil and transfer into sugar syrup. Let it there for 2 mins.
    Then remove from syrup carefully and arrange in plate.

8. I assure you it will come very well in first time itself when you did everything properly. so all the best

Note:

1. If you are trying first time mean then draw small jangri's.

2. Before draw in oil try out once in plate.

3. Flame should always be in low this prevents jangri to blow bigger one.

Papdi Dahi Chaat-Chaat item

Papdi dahi chaat is very famous Indian street food item. I already posted how to make papdi for chaat. Today let us learn how to make papdi dahi chaat with stepwise pictures.

Ingredients:

Papdi- 10 click here
Curd- 1 cup
Boiled potato- 1(small)
Onion- 1(small)
oma podi/Sev- 1 cup
Cumin powder- 2 tsp
Chilli powder- 2 tsp
Chaat masala- 2 tsp
Coriander leaves
Salt

Chutney:

Sweet chutney- 1 cup
Mint chutney- 1 cup

Preparation:

1. Whisk curd with little salt and sugar. Then keep it in fridge for 10 mins.

2. Chop onion and mash the boiled potato and add little chilli powder and salt.

3. Keep all the chutney's ready.

Assemble:

1. Keep 3 or 4 papdi in serving plate. And keep potato on it.

2. Now keep chopped onion and all chutney's.Top it with chilled curd.

3.Sprinkle all powders and chaat masala. Again drizzle a chutney's on top.Finely garnish with sev and              coriander leaves.

Papdi-How to make papdi for papdi chaat

I am a big fan of papdi chaat. Once papdi is ready in home we can make chaat immediatly. Today we will learn how to make papdi for papdi chaat. Later i will update how to make papdi chaat easily.

Ingredients:

Maida - 1cup
Ajwain- 1/4 tsp
Rava- 1 tsp
Ghee- 1 tsp
Baking soda- a pinch
Salt
Oil

Preparation:

1. Mix ghee and baking soda well.

2. Add maida,rava,ajwain,salt and mix everything well.

3. Now add little water and knead it well for a soft dough. Leave it for 10 mins.

4. After 10 mins roll it into a big circle and cut into small circle using bottle cap or some circle shape cutter as     like pic 1.

5. To avoid puffing using fork put holes all over the circle. This prevents dough puffing like puri. As like pic 2

6. Then heat oil in a kadai and deep fry it. While doing this keep the flame low.

7. After fried everything cool it and keep it in a airtight container.

Ingredients:

Maida- 2 cup
Powdered sugar- 1/4 cup
Milk- 1/4 cup
Ghee- 1 1/2 tsp
Cooking soda- 1/2 tsp

Preparation:

1. Beat ghee and cooking soda well and add powdered sugar.

2. Then add maida and mix everything well.

3. Finally add milk and knead it well untill you get soft dough.

4. Make that dough as a small balls.

5. Heat oil in the pan and fry it well till it turn it into goldern brown color.

Milagu Rasam-Pepper Rasam

Milagu rasam-pepper rasam is good for health. It is a good remedy for cold and sore throat. I make it without adding tomato here.so its a very easy version of pepper rasam.This is one of my favourite rasam sure you too like this.

Ingredients:

Tamarind water- 2 cup
Mustard seed- 1 tsp
Asafoetida powder- 1 tsp
Turmeric powder- a pinch
Coriendar leaves
Curry leaves
salt
oil

For crush:

Pepper-2 tsp
Jeera-1 1/2 tsp
Garlic- 5
Green chilli- 1

Preparation:

1. Take a tamarind water and add a pinch of turmeric powder and needed salt. keep it aside.

2. Now crush all those items which is given under the For crush.

3. After crushed add those items to tamarind water.

4. Keep kadai/pan in the stove. Add oil and mustard seed.

5. After it burst it out add the asafoetida powder.

6. Then pour tamarind water and check for salt.If needed you can add at this stage.

7. Let it for a single rolling,garnish with coriander and curry leaves.

8. Dont allow rasam to boil for more time which is a key to make a good rasam.

Macroni Payasam-Pasta Payasam-Indian Dessert

This is very simple indian dessert using macroni(or)pasta.Its very delicious when you cool it and had.All age groups love this.So this new year try this in your home and drop me a feedback.I wish you a all very happy new year 2014 :) :) ..

Ingredients:

Pasta(or)Macroni- 1cup
Milk-1 1/2 cup
Sugar-1/2 cup
Elachi powder-1 sp
Cashew nut-2 tsp
Ghee-2 tsp
Salt- a pinch

Preparation:

1. Boil pasta in hot water for 5-8 mins.Then remove from flame and wash it with cold water.

2. Boil milk then add this boiled pasta to that boiled milk..

3. Let this pasta boil in milk for 10 mins.

4. Now add sugar and stir it well.Let sugar be dissolved in milk.

5. Atlast add the elachi powder and roasted cashewnut in ghee.Keep in low flame for 3 mins.

6. Remove from flame and serve.

7. I prefer that this will be delicious when you cool it and had :)..So if you like keep in fridge for 15 mins and 
    then serve.

7. Otherwise serve hot..It also sounds good.. :)
