How to make Pani Puri-Golgappas.

Pani puries are also known as Golgappas in Northindia and its very popular street food or chat items. Every Indian like this and one step up i just love this...so today we will learn how to make pani puri (or) golgappas...

Pani Puri (or) Gol gappas


How to make puri:

Ingredients:

maida-1/2 cup
urad dal flour - 100 g
rave/sooji/semolina- 100 g
baking powder - a pinch
salt 
oil

Preparation:

Mix maida ,rava,urad flour ,salt,baking powder.

Add little water and it as dough like we prepare for roti.

Then make it as a small small balls and roll out each half one at a time into to big thin roti.

Either using small cup or bottle cap,cut out the puris from roti.Then fry it in oil.

Mint chutney:

Ingredients:

Mint leaves(pudina) - 1 bunch
Green chillies - 2
Ginger - 1/4 inch piece
Salt - for taste

Preparation:

Clean and wash the mint leaves. Grind mint leaves, green chillies, ginger and salt together to make the mint chutney. 

You can store this for upto ten days in the refrigerator and use them. 


Sweet chutney:

Ingredients:

Dates - 10
Tamarind paste - 1/2 cup
Jaggery - 1 tblsp
Cumin seeds - 1 tsp
Salt - a pinch
Asafoetida - a pinch

Preparation:

Soak the dates in warm water for one hour. 

Grind the dates, tamarind paste and jaggery together in the mixie until smooth. 

Take a pan and add just a spoon of oil and crackle cumin seeds. Add the ground paste and a little water and cook this on medium flame for a while. Add a pinch of salt and asafoetida and mix well. Switch off once the chutney is slightly thick and sticky. 

Transfer to a bowl and refrigerate. 

Method to make pani:

I bought ready made pani puri powder by Everest brand and diluted 5 tblsp of powder for 2 cups of water to make pani. 

How  to make Pani Puri:

Ingredients:

Puri - 10
Pani - 2 cups
Onion - 1
Potatoes - 3
Chilly powder - for taste
Salt - for taste
Sprouted green gram - 1/2 cup(optional)
Mint chutney
Sweet chutney
Bhujia(oma podi) - 1/2 cup

Preparation:

Cook the potatoes and smash them. Mix a tsp of chilly powder and required salt to the mashed potatoes.

Chop onion finely and keep it aside. 

Now to assemble the puri, break open a hole on one side of the puri and drop a tsp of mashed potato. Follow it by a tsp of chopped onion, then a tsp of sprouted green gram, then mint chutney and sweet chutney. Finally top it with some bhujia and serve them with a cup of prepared pani. :)

Pour a tblsp of pani into the filled puri and gobble them into your mouth :)

Homemade Chocolate

Making chocolate at home is not a tedious process as many assume..Its really very easy..There are many methods there for making chocolates but the method which i often do is using sugar syrup method.. Kids definitely like this chocolates.And during Diwali and Christmas, homemade chocolates make for excellent gifts.wrap the chocolate in colored papers and gift them to your family,friends and your valentine..:-)

Ingredients:

Cocoa Powder - 1/4 cup
Milk Powder- 200 grm
Sugar- 1 cup
water- 1/2 cup
Butter- 2 tsp
Vanilla essence- 1/2 tsp
Nuts & raisins

Preparation:

1. Take water and sugar and boil it to get a sugar syrup.After one string came switch off the flame.

2. Remove from fire and add butter.

3. Once it melt down add the milk powder, cocoa powder and vanilla essence.

4.Apply little butter in a plate and pour the chocolate.At this stage u can make a desired shape of your chocolate as your wish.otherwise Keep it in fridge and allow it to cool then make a equal size.

5.Enjoy eating home made chocolates :-) :-)......

Pudhina chutney

We all have heard of mint or pudina, as an ingredient in chutney or as a garnish in a subzi. It adds that special zing to almost all foods it is added to. But it is much more than just a garnish, the humble mint leaves have a number of health benefits that you probably didn’t know about.Here are some

1.Relieves indigestion
2.Fights aches and pains
3.Gives you glowing and acne free skin
4.Helps fight oral infections 

So today we will learn how to make simple pudhina/mint chutney.

Pudhina/mint chutney

Ingredients:

Pudhina/mint leaves - 1 bunch

Green chilli - 5 to 6 no

Grated coconut - 2 tsp

Tamarind - little (size of peanut)

Mustard seed - 1/2 ts

urad dal - 1/2ts

Salt

Oil  

Preparation:

1.  Heat a tsp of oil in a pan and fry the chillies and keep it as side.

2. Then in the remaining oil saute the pudhina leaves and keep it separatly.

3. Atlast fry the tamarind in the same heat.

4. Grind all those with grated coconut, salt and little water.

5. Atlast heat a mustard seed and urad dal in little oil and add it in chutney.

6. This chutney goes well with idly,dosa and side dish for rice.Enjoy with chutney :-)
