kara kulambu with brinjal

Kara kulambu with brinjal gives yummyyy taste..Before known this method i dont like this kulambu.. my mom use to scold me always for that :( :( .. Later i came to known this method from one of the site.. It makes me to try because of its color and odour.. Later i became fan for this :) :) .. Hot pot rice with kara kulambu and appalam is my favourite combo..

Ingredients:

Brinjal- 4
Onion- 1
Tomato- 2
Garlic- 7
Tamarind water- 1 1/2 cup
Sambar Powder- 2 tsp
Pepper Powder- 1/4 tsp
Turmeric Powder- 1/4 tsp
Jaggery- 1/4 tsp
Salt

 To Temper:

Fenugreek- 1/4 tsp
Mustard seed- 1 tsp
Urad Dal- 1 tsp
Toor dal- 1 tsp
Jeera- 2 tsp
Curry leaves
Oil

To Grind:

Grated Coconut- 1/2 cup
Onion- 1

Preparation:

1. Temper the given items given under temper.

2. Then add onion,garlic saute well for 3 mins. Now add tomato again saute well.

3. Add Tamarind water,salt,turmeric powder and sambar powder.In this stage you
    can add water if you needed.

4. Now add brinjal and leave for while. Let it boil.

5. Grind the items given under to grind. Make it as a fine paste.

6. Add this grind mixture. Let it again boil for 3 to 4 mins.

7. Atlast add pepper powder and jaggery. Keep it in low flame for while.

8. Sever with hot rice,dosa,idly..

Maida egg roll

Most of the kids hate egg. To be say frankly i too dont like  :) :).. So my mom make me to eat like this maida egg roll. When i first ate this i really dont know my mom hidden egg inside this roll. Because it was too yummy with sauce inside. Later only i came to know, my mom hidden egg inside. From that day i became fan for this recipe. Its really healthy one. Try it in your home and tell me your feedback..

Ingredients:

Maida flour- 2 cup
Egg- 2
Carrot- 1 big
Onion- 1 big
Green chilli- 1 big
Curry leaves
Water
Salt
Oil

Preparation:

1. Take a bowl and add maida and pinch of salt mix it well.

2. Then add little water knead it well as a soft dough.

3. In the mean time we prepare for inner stuf.

4. Take a kadai add oil and add onion and green chilli saute it well..(For quicken the process add little salt)

5. After onion turned into goldern color add grated carrot saute well for 5 min and check for salt.

6. Now stuffing is ready. Beat egg well and keep it aside.

7. Now we have to make a maida roti. Make a dough as a equal sized ball. Roll it in a roti maker.

8. In pan add oil heat this rolled dough. Once its color change flip it into the other side.

9. After both the side cooked well. Pour 2 tsp of egg in one side of roti and flip it into another side.
   After egg get cooked well. Remove from pan. Place the veg mixture in it and some drops of tomato
   sauce and roll it well and serve hot.

10. Repeat same for all the balls.

Note:

1. You can also add other vegetables.

2. Dont add more salt to vegetables when you saute.

Cauliflower Peas Gravy

This gravy is very flavourful and spicy. Goes well with roti and puri. First time i tried in home, but its taste and flavour makes me to add this as my favourite one. Sure you will also feel like me after tasted..

Ingredients:

Cauliflower- 1 small
Onion- 1 small
Tomato- 1 big
Green peas- 1 handful
Turmeric Powder- a pinch
Salt
Oil

For Grainding:

Coconut- 4 tsp
Cashewnut- 4 no
Onion- 1 small
Garlic- 4 flakes
Fried Gram- 1 tsp
Elachi- 2
Cinnamom- 1/2
Cloves- 2 no
Green chilli- 3
Red Chilli- 3
Dry coriander seed- 1 tsp

Preparation:

1. Grind everything which given under for grinding. Grind well as a thick paste.

2. Boil cauliflower and peas in hot water with salt and turmeric powder.

3. Then add oil in a pan and saute onion well.

4. Then add tomato and mash it well.

5. Now add the grind paste to it and fry in low flame.

6. Later add boiled cauliflower and peas and fry for few mins.

7. Add required water,salt and leave for a while. Let it boil for 3 mins.

8. Now cauliflower peas gravy is ready to serve with roti and puri...Enjoy eating :) :) ..

Coriander Coconut Chutney

This is very simple version of chutney. Its attracted by everyone because of its attractive color. It goes well with Idly and dosa.

Ingredients:

Scraped coconut- 1 handful
Coriander Leaves- 1 handful
Tamarind- small piece
Ginger- small piece
Green chilli-  4
Salt- as per taste
oil- 2 tsp

To Temper:

Mustard seed- 1 tsp
Urad Dal- 1 tsp
Curry leaves

Preparation:

1. Heat oil in kadai and saute coriander leaves and keep it aside.

2. In the remaining oil saute Tamarind and green chilli seperatly.

3. Then grain everything along with coconut, salt with little water.

4. Then temper the things given under To Temper and add it to chutney.

Note:

1. If you use fresh coriander leaves then chutney well look more colorful.

2. Use the fresh coconut.

3. You can also add 1 tsp of roasted gram when you grain chutney.
